🌮 SULLY'S TACO SOUP (THE SULLIVAN FAMILY RECIPE)
Sully walked into our kitchen after 29 years in the Army, 25 of them as a Green Beret, and six combat tours. He brought his wife Cindy's taco soup recipe. One pot. Simple ingredients. The kind of meal that fills a house and reminds you there are better days ahead.

DIFFICULTY: Beginner (one pot, one spoon, no excuses)
🥄What You’ll Need to Feel Better
1½ lbs ground beef (or ½ beef + ½ chorizo if you want to go deeper)
1 tbsp olive oil
1 medium onion, diced
3 cloves garlic, minced
2 tbsp chili powder
1 tbsp smoked paprika
2 tsp ground cumin
1 tsp dried oregano
½ tsp crushed red pepper flakes (optional)
Salt and pepper to taste
2 cups beef or chicken broth
1 packet ranch dressing mix (don't skip this — just trust)
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (10 oz) Rotel diced tomatoes with green chiles
1 can (28 oz) crushed fire-roasted tomatoes
1–2 chipotle peppers in adobo, minced (optional, adds smokiness)
Juice of 1 lime
½ cup fresh cilantro, chopped
The Toppings Bar (set it all out, let people build their own bowl — that's the move): Tortilla chips, diced avocado, sour cream, shredded cheese, jalapeños, lime wedges, cilantro.
🔥 How to Cook Your Feelings
Brown the meat. Heat olive oil in a Dutch oven over medium heat. Add the ground beef and cook until browned, about 5–7 minutes. Drain the excess fat. Don't be shy about it.
Build the base. Add diced onion and sauté 3–4 minutes. Stir in the garlic, chili powder, paprika, cumin, oregano, red pepper flakes, salt, and pepper. Cook for one minute. Your kitchen should smell like something worth staying home for.
Add everything else. Beans, corn, Rotel, crushed tomatoes, broth, ranch mix, and chipotle peppers if you're using them. Stir it all together and don't look back.
Simmer. Bring it to a boil, reduce heat, and let it go uncovered for 25–30 minutes, stirring occasionally. This is the part where the conversation gets good.
Finish it. Stir in the lime juice and cilantro. Taste it. Adjust the seasoning. Serve hot with the full toppings bar out on the counter.
